Best Chocolate Chip Cookies

Cookies are usually so simple to make I can’t see why folks bother with store-bought. Especially those bargain basement varieties that break your teeth. Like every other Canadian, I’ll make an exception for President’s Choice Chocolate Chip Cookies. That’s a damn fine cookie! I’m sure others would put forth Mrs. Fields and other brands as great cookies.

But let’s be honest: Cookies are easy to make, keep kids occupied (if you have some around) and you don’t have to add xantham gum to them so why bother buying them in a store?

So this is the cookie I make the most often. I’m generally against margarine (what’s on that label again?) but have yet to try this recipe with butter. Why mess with perfection?

Turn the oven on to 375. Mix the two types of sugar, margarine, vanilla and egg. Mix them well. No lumps please.

Stir in flour, soda, salt, and chocolate chips. The dough should be firm. If the dough isn’t firm, add a little more flour and keep mixing.

Supposedly you’re supposed to measure out a rounded tablespoon of dough. You can do this but I generally just roll some dough in my hands. Eyeball it, in other words. Drop the dough on a greased cookie sheet or silicone sheet if that’s your thing. Space ‘em so that they won’t run into each other. Bake about eight minutes until edges are lightly browned. I find nine minutes works better in my oven. Bake a minute of two longer if you like them crunchy.
